Emily Winston was born and raised in central New Jersey. For a special treat, her father would bring her lox, sable, whitefish, and cream cheese from Zabar's, and bagels from H&H. 

After moving to the Bay Area in 2010, she bemoaned the lack of proper bagels. When she heard that H&H had been shut down for tax fraud, she was distraught.  And so she embarked on what became her five year quest, to create a what eventually became Boichik Bagels. 

Their pop-ups which were a huge hit, so they opened their first brick and mortar Boichick Bagels store on College Ave in Berkeley in 2019. They now have five shops around the Bay Area and a factory, and are planning much more to come.
